Shucking Oysters
ALWAYS USE A BLUNT KNIFE
To open oysters safely, always use a blunted knife such as a dedicated oyster knife or something similar. It is common for the knife to slip off the oyster and sharp knives can cause serious damage to yourself or the people around you.
1. FIND THE HINGE
With the bulged side of your oyster facing down, insert the oyster knife into the hinge and wiggle until you feel it slip inside the shell. Twist the knife until you feel the hinge pop.
2. DISCONNECT THE EDGES
With the tip of your knife pointed towards the roof the oyster, run your knife along the shell to seperate the meat from the top shell.

3. REMOVE THE TOP SHELL
Once on the opposite side of the shell from where you started, twist the knife again to finish seperating the top and bottom shells at the hinge.

4. DISCONNECT THE MEAT
Slide your knife under the oyster meat and cut through the muscles holding it to the shell.
